Ingredients
- 1/3 cup soy sauce
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 2 tbsp honey
- 1 tbsp rice vinegar or white wine vinegar
- 2 tbsp sesame oil
- 1 tbsp crushed red pepper flakes (optional)
- 1 ½ lbs boneless chicken thighs, cut into 2-inch pieces
- 3 cups broccoli, chopped
- 1 red bell pepper, sliced
- 1 small white onion, sliced
- 2 tbsp sesame seeds, for garnish
Instructions
- Mix the sauce ingredients in a medium bowl. Reserve half of the sauce in a separate bowl and set aside. Add the chicken to the sauce and mix to combine, setting aside to marinate for 20 to 30 minutes.
- Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- Arrange the broccoli, bell pepper, and white onion on the baking sheet, then pour the chicken over, making sure to scrape out any sauce leftover in the bowl.
- Bake in the oven for 20 minutes, or until the chicken is cooked through and the vegetables are fork-tender.
- Drizzle the reserved sauce over the chicken and vegetables and toss to combine. Serve over rice and garnish with sesame seeds. Enjoy!
