Sheet Pan Sesame Chicken and Veggies

Ingredients

  • 1/3 cup soy sauce
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp rice vinegar or white wine vinegar
  • 2 tbsp sesame oil
  • 1 tbsp crushed red pepper flakes (optional)
  • 1 ½ lbs boneless chicken thighs, cut into 2-inch pieces
  • 3 cups broccoli, chopped
  • 1 red bell pepper, sliced
  • 1 small white onion, sliced
  • 2 tbsp sesame seeds, for garnish

Instructions

  1. Mix the sauce ingredients in a medium bowl. Reserve half of the sauce in a separate bowl and set aside. Add the chicken to the sauce and mix to combine, setting aside to marinate for 20 to 30 minutes.
  2. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  3. Arrange the broccoli, bell pepper, and white onion on the baking sheet, then pour the chicken over, making sure to scrape out any sauce leftover in the bowl.
  4. Bake in the oven for 20 minutes, or until the chicken is cooked through and the vegetables are fork-tender.
  5. Drizzle the reserved sauce over the chicken and vegetables and toss to combine. Serve over rice and garnish with sesame seeds. Enjoy!
