Roasted Butternut Squash and Sausage Pizza

Ingredients

  • 1 pkg store-bought pizza dough
  • 1 14-oz can crushed fire-roasted tomatoes
  • 3 tbsp olive oil
  • 1 cup butternut squash, cut into 1-inch cubes
  • 3 cloves garlic
  • 1 cup ground sausage, cooked
  • 1 cup mozzarella cheese, shredded
  • 1 shallot, sliced
  • 4 tbsp goat cheese
  • Salt and Pepper, to taste
  • Basil, for garnish

Instructions

  1. Prep the pizza dough according to the directions on the package. If using unbaked dough from the store, it often requires resting at room temperature for up to one hour.
  2. Preheat the oven to 450 degrees Fahrenheit.
  3. Line a baking pan with parchment paper and place the butternut squash and garlic cloves on the pan. Drizzle with 1-2 tbsp olive oil and sprinkle with salt and pepper. Bake for 15 to 20 minutes, or until the squash is fork-tender.
  4. In a small bowl, crush the roasted garlic with a garlic press and mix in the tomatoes. Add salt and pepper to taste and set aside.
  5. Stretch the pizza dough into a 12-inch circle and place it on a pizza pan. Top with sauce.
  6. Continue topping the pizza, starting with the sausage and mozzarella cheese. Then, add the butternut squash, shallots, and goat cheese.
  7. Bake for 5 to 8 minutes, then set the oven broiler to low and cook for an additional 4 to 5 minutes, or until the dough is cooked through and the cheese is bubbling and browned. (Note: Refer to the instructions on the pizza dough package and adjust cooking if needed.)
  8. Top with fresh basil and enjoy!
