Cranberry Pistachio and Honey Cheese Log
- 4 oz cream cheese, room temperature
- 7 oz goat cheese
- ½ cup dried cranberries
- 2 tbsp honey
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh thyme
- 1 cup roasted pistachios, crushed
Herbs and Parmesan Cheese Log
- 11 oz cream cheese, room temperature
- ¼ cup parmesan cheese
- ¼ tsp garlic powder
- 1 tsp lemon juice
- 3 tbsp chives, chopped
- ¼ cup Italian parsley, chopped
- ¼ tsp salt
- ½ tsp black pepper
- 1 cup roasted pecans, chopped
Instructions
- Working with one recipe at a time, add all of the ingredients (except the nuts) to a bowl and mix well with a spatula to combine.
- Pour the mixture onto a large piece of plastic wrap and roll into a log shape. Wrap tightly and set in the freezer for 30 minutes. (Note: Each recipe can yield one large cheese log, or you can divide the mixture into 2 or 3 smaller cheese logs.)
- Pour nuts onto a sheet of parchment paper and arrange in a large rectangle. Unwrap the cheese log and place in the center, rolling it to cover the outside with the chopped nuts.
- Wrap tightly with a clean piece of plastic wrap and set in the refrigerator for 30 minutes, or until ready to serve. Enjoy!
