Cranberry Pistachio and Honey Cheese Log

  • 4 oz cream cheese, room temperature
  • 7 oz goat cheese
  • ½ cup dried cranberries
  • 2 tbsp honey
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh thyme
  • 1 cup roasted pistachios, crushed

Herbs and Parmesan Cheese Log

  • 11 oz cream cheese, room temperature
  • ¼ cup parmesan cheese
  • ¼ tsp garlic powder
  • 1 tsp lemon juice
  • 3 tbsp chives, chopped
  • ¼ cup Italian parsley, chopped
  • ¼ tsp salt
  • ½ tsp black pepper
  • 1 cup roasted pecans, chopped

Instructions

  1. Working with one recipe at a time, add all of the ingredients (except the nuts) to a bowl and mix well with a spatula to combine.
  2. Pour the mixture onto a large piece of plastic wrap and roll into a log shape. Wrap tightly and set in the freezer for 30 minutes. (Note: Each recipe can yield one large cheese log, or you can divide the mixture into 2 or 3 smaller cheese logs.)
  3. Pour nuts onto a sheet of parchment paper and arrange in a large rectangle. Unwrap the cheese log and place in the center, rolling it to cover the outside with the chopped nuts.
  4. Wrap tightly with a clean piece of plastic wrap and set in the refrigerator for 30 minutes, or until ready to serve. Enjoy!
